Fit Fridays At The Farm~ Berries & Kiwi Acai Bowl

I have not met a smoothie bowl I did not like. Even some made with cauliflower as the base. There is something refreshing about a smoothie bowl after a hard workout, or a day outside working in the garden. It is just like taking a deep breath. I stay away from smoothies that are a calorie bomb. To achieve that, I stick with a leafy veggie to add heft then add fruits to keep it refreshing. Then top with fruits, nuts or unsweetened coconut flakes. For this one, I used produce I had on hand. It was the perfect way to say goodbye to hospital food and start introducing something bigger and low-fat into my diet after the surgery. It is delicious and of course, pretty. I love a pretty smoothie bowl and as a friend mentioned— Life Is Too Short, Eat Pretty.

This is super easy and really does not require an actual recipe. The key to a smoothie bowl is using frozen fruit to create a thicker consistency. For this particular bowl, I used the following:

  • 1-2 cups of frozen mixed berries

  • 1 pack of frozen acai pulp (I use Sambazon frozen pulp but you can also use the powder form)

  • half of one banana

  • 1 cup of spinach

  • 1 cup oat milk (of any milk you prefer)

  • cold water (on hand to thin out the mix)

  • banana, seeds and/or unsweetened coconut flakes for toppings

Steps: combined all the ingredients (except water) in a high-power blender or bullet blender. It the mix is too thick to blend, add some water to thin the consistency. What you are looking for is the thickness or a soft serve ice cream. Once blitzed, pour in a bowl and let it chill for about 10 minutes in the freezer. Decorate with toppings and voila!
